Taco Soup

Ingredients
1 lb ground turkey (or beef)
1 onion, chopped
1 small red or yellow pepper, chopped
1 can black beans
1 can kidney beans with liquid
1 can corn
1 8oz can tomato sauce
2 cans diced tomatoes with green chilies
2 cups water
1 packet taco seasoning
cumin & chili powder

Prep Instructions
Brown ground turkey to crumbly in a frying pan. Add 1/4 cup water and taco seasoning, coat. Add ground turkey, onion and pepper to freezer ziploc, freeze.

Day of Instructions
Dump contents of bag into crockpot, add beans, corn, tomato sauce, tomatoes, water, and cumin & chili powder to crockpot. Cook on low for 8-10 hours or on high for 4-6 hours (depending on your crockpot!) Top with avocado, cheese, and sour cream and serve with tortilla chips!

*If you'd like, you can add all the ingredients except the water to a freezer bag and then just dump it all in the day of, all the ingredients hold up well in the freezer.

Greek Beef Orzo

Ingredients
Nonstick cooking spray
12-16 ounces beef stew meat, cut into chunks
1 medium onion, cut into chunks
1/4 tsp salt
1/8 tsp pepper
1 cup beef broth
3 tablespoons tomato paste
3/4 tsp Greek seasoning
1 medium zucchini, chopped into bite-sized chunks
1 medium squash, chopped into bite-sized chunks
1/2 cup orzo
Crumbled feta (optional)

Prep instructions
Sprinkle meat with salt & pepper (you can add more or less than the above amounts). In a small bowl, combine broth, tomato paste, and Greek seasoning. Add meat and broth mixture to a freezer ziploc bag. Freeze.

Day of
Spray the crockpot with non-stick spray. Dump contents of bag into crockpot, cook for 4-6 hours on high or 6-8 hours on low (depending on your crockpot) 50 minutes before dinner, add chopped zucchini & squash & orzo to pot, stir to make sure orzo is covered with liquid. Allow to cook for 40 minutes on high. Let rest and cool 10 minutes. Top with crumbled feta if you desire!

*I liked this dish pretty well when I ate it, but it was even better after it had sat awhile and the sauce thickened with the orzo... if you have time to let it set longer, I would!

Mexican style sausage & Beans

Ingredients
1 15oz can of black beans
1 16oz package of smoked turkey sausage, sliced
1 can corn
1 sweet red pepper, chopped
1 medium onion, chopped
1 cup salsa (you decide the temp)
1/2 tsp cumin
2 cloves garlic, minced
Rice (optional)
Sour cream (optional)
Shredded cheddar cheese (optional)

Prep Instructions
Combine black beans through garlic in a freezer ziploc bag... freeze.

Day of:
Take out of freezer, put into crockpot, cook on low for 6-8 hours or on high for 4-6 (open to interpretation depending on your crockpot) Serve over cooked rice, topped with sour cream and shredded cheese (if you desire). I also serve this with cornbread for some extra substance!
